To keep lemongrass going in the winter months, start a new plant by dividing a mature plant or rooting a younger shoot. Place them in a cup of water until roots begin to grow, then plant in well-drained soil. To harvest, cut the stalks when they’re around 2 1/2 inches long and about an inch wide at the bottom. The leaves make a lovely herb in cooking and also a wonderful tea.
